Perfectly Roasted Semolina Halva
A quick, comforting classic Turkish dessert made with roasted semolina, butter, and pine nuts, steeped in sweet milk.

Ingredients
- 1.5 cups semolina
- 100g butter
- 1/4 cup vegetable oil
- 1.5 cups granulated sugar
- 1.5 cups milk
- 1.5 cups water
- 1 tablespoon pine nuts
Instructions
For the syrup: Mix the milk, water, and sugar in a bowl until the sugar dissolves (do not boil this mixture).
Melt the butter and vegetable oil in a wide pan. Add the pine nuts and lightly toast them.
Add the semolina and roast continuously over low heat until the semolina turns a deep golden brown (about 15-20 minutes).
Carefully pour the cold syrup over the hot roasted semolina (be careful as it will splash).
Cover the pan, let it simmer on very low heat until the semolina absorbs all the liquid. Serve warm.
