Traditional Turkish Forest Kebab (Orman Kebabı)
A wonderful traditional one-pot stew made by slowly cooking cubed meat with peas, carrots, and potatoes in a savory broth.

Ingredients
- 500g cubed beef or lamb
- 2 carrots
- 2 potatoes
- 1 cup green peas
- 1 onion
- 1 tablespoon tomato paste
- 1 tablespoon all-purpose flour
- 3 tablespoons vegetable oil
- Salt, black pepper, thyme
Instructions
Heat the oil in a heavy-bottomed pot and sear the meat over high heat until it releases and reabsorbs its juices.
Add the chopped onion and sauté until translucent.
Sprinkle in the flour and cook for 1-2 minutes to help thicken the stew's broth later.
Stir in the tomato paste and cook until fragrant.
Add the diced carrots, potatoes, and green peas to the pot.
Pour in enough hot water to cover the ingredients, add salt and pepper, and simmer on low heat until the meat and vegetables are fully tender. Add thyme just before removing from heat.
