Nutritious Green Lentil Bulgur Pilaf
A very hearty, economical, and healthy pilaf recipe that transforms into a full meal when served with ayran and pickles.

Ingredients
- 1 cup coarse bulgur wheat
- 1/2 cup green lentils
- 1 onion
- 2 tablespoons vegetable oil
- 1 tablespoon butter
- 2 cups hot water
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
Boil the green lentils until they are just tender (al dente). Drain and discard the dark water.
In a pot, heat the vegetable oil and butter, then sauté the finely chopped onion until soft.
Add the washed and drained bulgur to the pot and sauté with the onions for a few minutes.
Stir in the boiled green lentils, salt, and black pepper.
Pour in the hot water. Cover the pot and simmer on low heat until the liquid is fully absorbed.
Place a paper towel between the pot and the lid, and let the pilaf rest (steam) for 10-15 minutes before serving.
