Classic Turkish Red Lentil Soup
A heartwarming, restaurant-style traditional Turkish red lentil soup recipe. Easy to make, delicious, and nutritious.

Ingredients
- 1 cup red lentils
- 1 onion
- 1 tablespoon all-purpose flour
- 1 carrot
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried mint
- 6 cups hot water
- 2 tablespoons vegetable oil
- 1 tablespoon butter
Instructions
Wash the lentils thoroughly in cold water and drain.
Roughly chop the onion and carrot.
Heat the vegetable oil in a large pot, lightly sauté the onion, then add flour and stir until fragrant.
Add the carrots and lentils to the pot and sauté for a few more minutes.
Pour in the hot water, cover the pot, and simmer until the vegetables and lentils are tender.
Blend the soup using an immersion blender until completely smooth.
Add salt and spices, and bring to a boil one last time.
In a separate small pan, melt the butter, stir in the dried mint until fragrant, and drizzle over the soup before serving.
